Preserves and Relishes
 |
Only the freshest of
fruits and vegetables grown in the fertile farm lands
and orchards of our Yakima Valley are chosen for my
preserves. |
The preserves by Mary Joyce of the North Woods come to you
from a little pink cabin in the Cascade Mountains of Washington
State. I use the freshest locally grown produce available.
Most of the blueberries, raspberries, apples and pears come
from our own woodland garden and orchard. The other fruits
and vegetables except, for the onions, are from the rich farmlands
of the Yakima Valley. The onions used are “Walla Walla
Sweets” and they come from Walla Walla, Washington.
One of the best compliments that I get is when someone says,
“This tastes just like my Grandma used to make.”
Some varieties of my preserves are familiar – like Grandma’s.
Others are unique in flavor, texture and taste. These are
a result of many days of trial and error in my kitchen “lab”.
All finished product is prepared in the certified kitchen
of the Nile Valley Church.
My goal is to provide products that you and your family
will enjoy. My delicious jams, jellies and relishes are guaranteed
to put a smile on your face. ENJOY!
North Woods Red Raspberry - NEW
Washington State red raspberries are responsible for
the summer fresh, rich, sweet taste of this delicious
jam with a lovely burgundy red color. There is nothing
like homemade. Try it on hot biscuits, scones, toast
or my favorite - vanilla ice cream.

North Woods Strawberry Jam - NEW
Washington State strawberries make a jam that should
be spread lavishly on biscuits, toast, and scones so
thick that you have to lick it up as it drips off the
sides. Use it to make a strawberry glazed ham for that
special touch (see recipe below).

North Woods Strawberry Preserves - NEW
Whole (sometimes half pieces depending on berry size)
strawberries are floating in a sea of luscious red strawberry
syrup. Spoon in onto ice cream, let French toast and
waffles swim in it or eat it right out of the jar -
yummy!

North Woods Fresh Apricot Jam - NEW
The fresh sweet-tart taste of Washington State apricots
is like a bite of summer in this golden jam. I love
it on my morning toast, but its uses are many. Some
recipe ideas using this delicious jam are included below
for you to try and enjoy.

North Woods Mountain Huckleberry Jam - NEW
Purple jewels from the mountains of Washington Sate
- we call them HUCKLEBERRIES. These little berries have
a unique and wonderful flavor all their own. If I’m
lucky enough to beat the bears to them and I don’t
spill my bucket full as I walk back down the mountain
after picking for hours, they turn into a true treat
from the mountains - North Woods Mountain Huckleberry
Jam. Use it on hot biscuits, scones, or toast. Put it
on ice cream or spread it on thin crepes, role and sprinkle
with powdered sugar - wow! It also makes for a very
special gift if you can part with a jar.

North Woods Honey Pear Butter
Washington State Bartlett Pears are hand selected for
this very special pear butter. There is just the right
amount of honey and sugar added for a fresh from the
tree taste. The home-style technique used produces a
fruit butter like Grandma used to make. This light,
honey-yellow spread is wonderful with hot biscuits and
toast or top hot cereals such as oatmeal when you don’t
have fresh fruit.

North Woods Apple Butter
The fresh apples of Washington State and a special,
secret blend of spices, make this apple butter mouthwateringly
delicious. It tastes like an apple pie in a jar - perhaps
even better than Grandma used to make. Use it on hot
biscuits, pancakes, and waffles or heat it up and put
it on ice cream - yummy!

North Woods Peach Honey Butter
The essence of fresh Washington peaches is a gourmet
delight in this butter. Use it on hot biscuits, croissants
or scones. This beautiful spread has the color of amber
honey. It’s great stirred into BBQ sauce and used
to glaze pork chops or ribs.

North Woods White Grenache Wine Jelly
This gourmet jelly is a special accompaniment to chicken,
turkey and game hens as well as being delicious served
with cream cheese on crackers or with rolls and croissants.
A chicken sandwich with this jelly and cream cheese
is terrific. The white Grenache wine produces a very
pretty pastel pink jelly with a light sweet taste.

North Woods Party Pear Jam
Washington State Bartlett Pears are really showcased
in this colorful and delicious jam. It is terrific on
hot scones, toast, fresh hot breads or top ice cream.
The light honey colored preserve is speckled with chunks
of red maraschino cherries while suspended crushed pineapple
tidbits swirl within.

North Woods Party Pear Jam w/Splenda
This is the exact recipe as the original Party Pear
Jam. Splenda has been substituted for the sugar. It
is deliciously rich. Please note that due to the Splenda,
the jam does not set up as solid as the original version.

North Woods Sangria Wine Jelly
I call this a “Party in a Jar”. This gourmet
jelly is a special accompaniment to turkey and game
hens as well as being delicious served with cream cheese
on crackers or with biscuits and croissants.
Peanut butter never had it so good! During a sampling
one afternoon a lady said “This tastes fermented.”
I guess one of us wasn’t listening when I said
“Wine.”

This is a bright red jelly that tastes like a candied
apple only better. Washington State apples star in this
cinnamony gourmet treat. Spread this beautiful red jelly
lavishly on fresh bread or biscuits and enjoy. The color
makes it a great holiday item. Place a jar of this jelly,
a jar of the green Jalapeno Jam, a scone mix and a pretty
kitchen towel in a basket and you have the perfect gift.

North Woods Sweet Corn Relish
Yakima Valley sweet corn and peppers are blended with
sugar and spices for a gourmet taste treat. It is great
used as a side with sandwiches - especially hamburgers.
Add it to potato or macaroni salads or serve it with
fish. It’s delish!

This colorful relish is a mouthwatering blend of Yakima
Valley sweet corn and savory peppers. The recipe is
basically the same as for the sweet relish with a little
added “snap”. It is delicious with sandwiches,
fish, chicken or added to salads.

North Woods Rhubarb Conserve
Rhubarb from our North Woods Garden is used in this
rich and tasty treat. The flavor is tremendous with
pork roast, roasted chicken and turkey, or with barbequed
salmon. It’s good with biscuits and English muffins
for a special morning wake-up with coffee or tea.

North Woods Apricot Jalapeno Jelly
This beautiful and unique jelly is the perfect side
with halibut, cod or sea bass. Use it instead of tarter
sauce with battered fish. It’s great with salmon
and sausage. Chunks of dried apricots seem to float
in a gold/red jelly.

North Woods Sweet Onion & Red Pepper Dip
This versatile gourmet relish was inspired by the request
of my neighbor Sam. It can be used as a dip for chips,
accompaniment for meats - especially with grilled hamburgers,
or blend with cream cheese to make an absolutely delicious
spread for bread or to use as a thicker dip. Walla Walla
Sweet Onions are responsible for the wonderful flavor
in this pretty, red salsa style preserve.

North Woods Holiday Pepper Sauce
This is a delicious blend of sweet and savory peppers
that are grown in the Yakima Valley. This colorful sauce
with its red and green vegetables makes a lovely hors
d’oeuvre when poured over cream cheese and served
with crackers. Use it as a dip for bread, a condiment
for meats, glaze a pork roast or stir it into coleslaw.

North Woods Jalapeno Jam
What a delicious attention getter this is! In this
pretty green jam there is a combination of a little
hot and a little sweet that is hard to resist. Serve
it with cream cheese and crackers or crusty French bread.
It’s a great condiment with any “South of
the Border” entrée. It goes nicely with
chicken, fish and pork.

This chutney made from the fresh peaches of Washington
State has a rich, bold flavor. It is especially good

great glaze for ham.

North Woods Peach-Habanero Preserves
This peach marmalade is HOT STUFF with a rich, unforgettable
flavor. It is terrific blended with cream cheese and
used as a spread for biscuits. It is excellent served
with pork, fish and poultry. Use it as a condiment or
bake it into the meat. After your first bite and your
taste buds have been alerted to the “tingle”
of the habanero peppers, you will find yourself digging
through the golden preserves for the big, juicy chunks
of flavorful orange-spicy peaches.

Our own north woods garden produces fat, juicy blueberries
that are showcased in this special preserve. This beautiful,
dark purple-blue preserve is just bursting with flavor.
It is superb on your favorite breads, use it as a topping
on ice cream and cakes, swirl it into muffin batter,
or try it on waffles or French toast and sprinkle with
powdered sugar - yummy!

North Woods Red Delicious Applesauce - Unsweetened
Our north woods applesauce captures the fresh, sweet,
juicy goodness of the Washington State apple in a jar.
There is no added sugar. The kids love it as much as
the adults. It tastes great. All you need to add is
a bowl and a spoon. Put it on pancakes or stir it into
cake, muffin and cookie recipes. I usually have three
varieties - Red Delicious, Golden Delicious and Jonagold.

the use of the sparkling clean and well equipped kitchen
of the Nile Valley Community Church for all of my food
processing. |

The special recipes used
are developed in my home kitchen and, when perfected,
I'm off to the church for a day of canning.

Canning and preserving is
hard work. I take pride in what I do and am very particular
about each step in the process.

that by allowing me to use his kitchen, he assures the
Nile Valley of great jelly! His favorite is the Holiday
Pepper Sauce with some fresh mint to make the perfect
leg of lamb. |
The finished product is jars
of glowing preserves and relishes that resemble holiday
lights in the sun with glowing flavors to match.
