Recipes using North Woods Preserves

Vegetables with a North Woods Apricot Sauce

Vegetables:
1 lb. fresh broccoli spears
1 lb. fresh cauliflowerets
1/2 lb. fresh mushrooms - quartered

Sauce Ingredients:
2 cups water
2 chicken bouillon cubes
1 cup sour cream
1/2 cup North Woods Fresh Apricot Jam
1 teaspoon lemon juice
1/2 teaspoon curry powder
1/4 teaspoon salt, or more to taste

Dissolve bouillon cubes in water in large saucepan. Add vegetables, cover and cook until broccoli is tender, about 5 minutes. Drain.

Combine remaining ingredients in a small saucepan. Cook and stir until heated and pour over vegetables.

Yams with Spiced Apricot Sauce

1 1/2 cups North Woods Fresh Apricot Jam
1/2 cup water
2 teaspoons lemon juice
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
4 large yams - peeled and cut lengthwise into 8 wedges
*Note:I prefer to use Red Garnet Yams. They are sweeter and have a better texture.

Combine preserves with water in a heavy saucepan. Over medium high heat, bring to a boil; reduce heat and simmer for 5 minutes, stirring constantly. Remove from heat and stir in lemon juice, nutmeg and cinnamon.

Arrange yams in a baking pan that you have coated with a non-stick cooking spray and baste with half of the sauce.

Bake at 400 degrees for 20 minutes and baste with remaining sauce. Continue baking for another 20 minutes or until tender.

North Woods Strawberry Glazed Ham

1 7 pound fully cooked ham
1 cup North Woods Strawberry Jam
1 tablespoon prepared mustard
1 tablespoon lemon juice :

Make diagonal cuts on the fat surface of the ham, about 1/8 inch deep and 3/4 inch apart.

Place ham, fat side up on rack in a shallow roasting pan that has been coated with a non-stick cooking spray. Bake at 325 degrees for 2 1/4 hours.

While the ham is baking, combine preserves, mustard and lemon juice in a small saucepan over low heat, stirring until blended.

During the last 20 minutes of baking, brush ham with about 1/2 cup of the glaze. After removing ham from the oven, let it stand about 10 minutes for easier slicing.

Place sliced ham on a serving platter and drizzle with the remaining sauce.

Note: This is delicious and you may want to make extra sauce to serve with the ham.

Green Magic Dressing

Makes a great dressing or dip

Combine 1/2 cup mayonnaise, 1/2 cup sour cream, 2 1/2 tablespoons lemon juice, 4 teaspoons Green Magic Seasoning, 1/2 teaspoon ground white pepper. Add milk to thin to desired consistency. Chill.

I had bought some green magic and you included a receipe for making a dressing that were fabulous over deviled eggs. Needless to say I misplaced that the receipe. I checked in your cookbook but it's not in there either. Can you please send me the receipe if it's not too much trouble?
